Rooted in the ancient limestone soils so characteristic of the Breede River Valley, our mature Chardonnay vineyard is perfectly positioned to produce grapes of the quality, character, and complexity required for crafting an outstanding Cap Classique wine. Our Pinot Noir vineyards, set on north-facing slopes and grown in black slate soils, provide the structure and elegance essential for an outstanding sparkling wine.
Aged On Lees For Remarkable Depth
Once harvested in the cool early morning hours, the grapes for our Cap Classique wines are whole-bunch-pressed to create a soft, refined base wine. Following dry fermentation, the wine undergoes secondary fermentation in the bottle using the traditional method and is aged on lees for 24 months before disgorgement, lending remarkable depth and finesse to the final product.

An excellent companion to grilled fish, sushi, fresh oysters, or roast chicken, this refined Cap Classique also pairs beautifully with smoked salmon canapés or raspberry-baked Brie. Serve between 8-10˚C for optimal enjoyment.
