Recipe: Junel’s Creamy Lemon Shrimp Pasta with Reserve Viognier Pairing

Recipe: Junel’s Creamy Lemon Garlic Shrimp Pasta Paired with Alvi’s Drift Reserve Viognier

 

Serves 4-6

Prep time: 10 minutes | Cooking time: 20 minutes | Total time: 30 minutes
You’ll need a large skillet/frying pan and a large pot to cook the pasta.

 

Ingredients:

  • 500 g / 1 lb tagliatelle or pasta of your choice

 

For the Creamy Lemon Garlic Shrimp Pasta Sauce:

  • 3 tbsp butter
  • 500 g shrimp or prawns, deveined and shelled
  • 4 garlic cloves, crushed
  • 1 cup / 250 ml cream
  • 2-3 tbsp fresh lemon juice
  • Handful of fresh parsley, finely chopped
  • Salt, to taste
  • Pepper, to taste

 

Instructions:

  1. In a large pot of salted, boiling water, cook the pasta until al dente. Drain and reserve one cup of cooking water.
  2. Meanwhile, melt two tablespoons of butter in a large skillet over medium heat. Cook the shrimp in batches until golden brown and opaque, seasoning to taste. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining butter and garlic, cooking for a few seconds until the garlic starts to release its flavour. Add the cream, lemon juice (starting with two tablespoons and adjusting as desired), parsley, salt, and pepper.
  4. Let the sauce simmer over a gentle heat until it thickens enough to coat the back of a spoon. Return the shrimp to the skillet and adjust the seasoning if required.
  5. Add the cooked pasta and a little of the reserved cooking water to the sauce, tossing until the pasta is well-coated.
  6. Serve the pasta hot, garnished with lemon wedges and chopped parsley.
